Ingredients for 10 portions:

700 g fresh salmon fillet
60 g salt
30 g sugar
3 eggs
10 g coriander seeds
2 Golden apples from Val Venosta
1 shallot
10 g butter
50 ml white wine
20 g curry
80 g fresh cream
20 blinis



Crush coriander seeds and add them to salt and sugar; these ingredients will later be used for marinating the salmon fillets. Peel the apples, remove the core and cut them into pieces. Wash and chop the shallot and brown in butter. Add apples and curry and sauté for a few minutes. Pour white wine and cook at low heat (the pan must be covered). Cook eggs for 9 minutes and peel them when cool. Remove the egg-white and whisk the yolks with the apples. Add whipped cream. Keep in the fridge. Remove the salmon from the marinade and slice it thinly. Prepare the plates with marinated salmon, froth and warm blinis.
