Ingredients for 10 persons:

30 fresh anchovies
3 carrots
2 red onions
200 g celery
bay leaf
pepper
salt
100 g white wine
3 Stark apples
500 g apple vinegar
extra vergine olive oil
corn salad
200 g corn flour
seed oil
sugar
garlic
homemade bread (piece)

 

Preparation:

Wash anchovies, cover with corn flour and put them into a pan with plenty of seed oil. Drain carefully.
Thinly cut vegetables and cook them separately.
Prepare reduced vinegar by boiling apple vinegar with sugar, peppercorns, salt, garlic, white wine, water and bay leaves.
Thinly slice apples and steam them in olive oil for a few minutes.
Blend reduced vinegar with extra vergine olive oil.
Toast thinly sliced bread slices in the oven at 120° C for a few minutes.

Arrange the bread slices on the plates with vegetables, apples and anchovies and season with the sauce prepared.
