Ingredients for 10 persons:

1.5 kg shoulder of beef or tender young beef (vitellone) or beef
500 g fresh Burrata cheese
200 g Red Delicious apples from Val Venosta
Maldon salt or salt flakes
500 g corn salad
500 g Altamura bread (loaf)
olive oil extra vergine

For the sauce:

500 g white celery
1000 g pine nuts
100 grated cheese
200 g olive oil extra vergine
ice cubes
salt
lemon juice of half a lemon

 

Preparation:

Wash the meat.
Cut the meat into thin slices and pound gently.
Cut the apples into thin slices and the Burrata cheese into small pieces.
Arrange the meat together with the Burrata cheese, salt, oil and apples on a steel plate.
Slice the bread and toast it in the oven.
Remove the celery leaves, wash them and mix with pine nuts, ice cubes and cheese, add oil little by little and salt.

Serving suggestion:
Arrange the meat in a circle and garnish with celery sauce, corn salad and toasted bread.
